Coming home to a crockpot full of chili to share with my boyfriend made my Friday night even better. I think this chili is the best I’ve made so far, so I’m sharing the recipe with you.

1 lb. ground turkey
1 onion, chopped
1/2 red pepper, chopped
1 tsp oil
1 15 oz. can kidney beans
1 15 oz. can black beans
2 28 oz. cans crushed tomatoes
2 Tblsp. molassas
1 1/2 packets taco seasoning (or two whole packets if you like it spicier)
1 tsp. cumin
1/2 tsp. paprika

Brown the turkey in a skillet, and when it is cooked, place in an (at least medium sized) crock pot.

Sauté the onions and peppers in the oil until soft, and then add to the crockpot.

Add all of the other ingredients into the crockpot and stir. Cook on low for six hours.

Serve with cheese on top and cornbread. Makes about two quarts.

Hello Friends, A curious, kind, practical, and energetic writer, wife, mother, and teacher is one way to describe me. I enjoy thinking about transitions--in schools, churches, families, relationships, and even countries. I'm passionate about learning, and I love working with people. Stop by often to see which kind of transition I'm thinking about, and I would appreciate hearing your thoughts. Peace! ~Mary Hope
