Salmon Patties with Lemon Sauce

20150429-150303-54183452.jpgI started making this recipe over fifteen years ago, and it is a wonderful way to serve salmon! If you have leftover salmon from cooking a fresh/frozen salmon, that can be used instead of the canned salmon.

The Recipe:

1 can (14 ¾ oz.) pink salmon, bones and skin removed

¾ cup milk

1 cup soft bread crumbs

1 egg, beaten

1 Tblsp. dried parsley or 2 Tblsp. fresh parsley, chopped

1 tsp. minced onion

½ tsp. Worcestershire sauce

¼ tsp. salt

1/8 tsp. ground pepper

Lemon Sauce:

2 Tblsp. oil

4 tsp. flour

¾ cup milk

2 Tblsp. lemon juice

¼ tsp. salt

Dash of pepper

Optional, but a nice touch: 2 Tblsp. grated lemon rind

Combine the first nine ingredients in a medium-sized bowl, and then pour into a greased 9”x9” square pan. Bake at 350 degrees for 45 minutes or until golden brown.

To make the lemon sauce:

Heat the oil over a medium heat, and add the flour; stir to make a smooth paste. Stir in the milk, and stir constantly until it starts to thicken. Once it is a sauce-like consistency, add the lemon juice, rind, salt, and pepper and talk off the heat. Makes about 1 cup, and let people spoon it over their salmon patties.

Enjoy! Makes 4 servings.

  1. My mom used to make salmon burgers for us but I’ve never tried personally! Your scrumptious salmon patties with elegant lemon sauce is just the thing to get me to try it!
