Curried Quinoa and Chickpea Salad



A few weeks ago this recipe came to my mind, and the refreshing citrus and salty textures are a winner!


2 c. cooked quinoa

1 (15.5 oz) can cooked chickpeas

1/2 c. chopped fresh parsley

1/2 c. chopped tomatoes

1/3 c. black olives


1/4 c. rice vinegar

1/3 c. olive oil

2 Tblsp. lime juice

1/2 tsp. curry powder

1 tsp. minced garlic

Salt and pepper to taste


Mix together the solid ingredients in a medium-sized bowl. Wisk together the dressing ingredients in a smaller bowl and then add to the rest of the ingredients. Serve and enjoy.

Makes 4 servings.
