Rosemary Pork Loin Crockpot Style

As autumn turns to winter, crockpot meals are becoming more often at my house. This flavorful pork is a personalized version from one of CrockPot’s cookbooks:

Crock-Pot Recipe Collection

3 lb. pork loin

1 tsp. salt

1 tsp. pepper

2 tsp. dried rosemary

2 T. olive oil

4 cups. chicken broth

3 stalks celery, chopped into chunks

5 carrots, peeled and chopped into chunks

2 onions, sliced

Heat oil in a large skillet over medium heat. Place the loin in and brown the two main sides. Sprinkle the loin with the salt, pepper, and rosemary.

Place the meat in a 6 qt. Crockpot. Add the vegetables and the broth. Cook on high for 3 1/2-4 hours or until the meat reads 160 degrees F on a meat thermometer. Serves 5-7. Enjoy!
