Valentine Strawberries

Easy Chocolate Covered Strawberries

These strawberries are great if you are single, married, or anywhere in-between! Celebrate Valentine’s day with these easy to make treats. My husband and I already started celebrating yesterday by eating a whole patter of these (we finished them off at breakfast this morning!)

1 lb. fresh strawberries

2/3 cup. semi-sweet chocolate chips

Wash the strawberries and pat them dry with paper towels to make them completely dry before you dip them.

Place the chocolate in a 2-cup glass measuring cup; place it in the microwave for 2 minutes. Check the chocolate. It probably will need 1-2 more minutes so that all the chips start melting a bit. Stir them and if it all starts getting creamy and the final hard chocolate is melting, then you don’t need to heat them any more. If they need more time, put it in for 30 second intervals until fully melted.

Prepare a platter covered with plastic wrap or aluminum foil.

Scoop a teaspoon of chocolate onto a teaspoon, and swirl it around a strawberry to cover the berry (or just dip it in—this way is my favorite). Place on your platter to harden. Cover all of the berries with the chocolate.

Let the berries sit for an hour, and then they are ready to serve. They are best eaten within 24-hours. Makes 12-16 berries depending on the size of the strawberries you choose.

I like this cup-measure because it keeps the chocolate together and holds the heat nicely to help finish the melting process:

Book Review: A Book to Read on Your Honeymoon 

Need a funny book about marriage– book to read on a romantic get-away or just before bed? Melanie Shankle unpacks the “realness” of marriage in a way that makes you laugh and be releived that you are not the only one feeling crazy. Her book, The Antelope in the Living Room: The Real Story of Two People Sharing One Life, is filled with hilarious stories about her and her husband’s journey into marriage, including a story about a hunting trophy (I think an antelope head) trying to make a home on her wall…

 

A friend gave me this book at a bridal shower, with the advice, “Read this on your honeymoon… especially if you are feeling frustrated about something…” I did what she instructed, and even though Stephen and I didn’t have an explosions on our honeymoon, it was nice to have a book to get into during our down time.

Stephen and I are about to start re-doing our flooring in our house, so I think it is about time to read it again!

Standing Beside My Man (Book Talk)

Did you know that guys just want the woman that they love to be near them as they work, play a game, fix a truck, or just watch TV? My Wedding Bouquet 

My wedding flowers mixed country wildflowers with sophisticated peonies and spray roses in an explosion of joy that lasted a whole month! My friend Bri works at Andrew’s Garden, and she created a beautiful bouquet for me.

Returning Treasures

Have you ever lost something and thought you might never see it again? My husband gave me my wedding present a few months early, and I love it! The watch had crystals on it, so I could wear it to our wedding, and I love this photo that our photographer, Ryn Manby, captured of it:

After I got my teaching job, I was quickly sorting and gathering things in our crawl space, and my wedding watch disappeared from my wrist! I looked all through the house, and I even called the movie theater where I thought I might have lost it. I started coming to grips with the realization that I lost the wedding present from my groom, and I cried. I had this hunch that I would find it someday, but I stopped looking.

Two and a Half Years after My Article: “My Younger Sister is Getting Married, and I’m Still Single”

Is it harder for older sisters to get married? Yes, I think it is. Birth order does matter; older children just have different pressures and experiences than their younger siblings, and this can influence their love lives. Especially this holiday season I’ve seen more Google searches that lead older sisters to my article “My Younger Sister is Getting Married, and I’m Still Single” that I wrote two and a half years ago; now it is time to follow up that piece. What has happened with my love life? What have I learned since then?

Life updates: My love life has blossomed since I wrote that article, and I am now married to a wonderful man named Stephen (you can see engagement photos here: Our Silly Engagement Photos ). My younger sister is still ahead of me by becoming a mother to a wonderful little guy and having another one on the way. I had to practice what I wrote again when my younger brother got engaged before me too, but I still got married before him, so I wasn’t the last child in our family to get married. Some lessons I’ve realized about how to help love grow include learning to relax, trusting God’s timing, and being willing to risk love.
